Banana Nut Blueberry Muffins or Bread 2 1/2 cups of all purpose flour 1 3/4 cups sugar 1 tsp baking soda 1 tsp salt 1/2 cup (1 sick) melted butter 2 large eggs 1 tsp vanilla 3-4 medium sized very ripe bananas 1/2 cup buttermilk (can substitute Creme fresh) 1 cup ripe frozen or fresh blueberries 1 cup pecan nuts (as desired ) Preheat the oven to 350F. Spray or grease loaf pan or line with parchment paper or use muffin tins. Mix in sugar, butter, eggs, vanilla and buttermilk. Mash in bananas.mix until smooth. Add flour, salt, baking soda. Mix then add blueberries and nuts. Pour in baking tins add streusel if desired. Bake for 1hr to 1.5 hrs for 9 inch loaf for muffins 25-30 min. Test by inserting a toothpick. Let cool on wire rack then loosen from the sides of baking tin. Remove from tin 45min-1hr let cool further Optional streusel topping : mix together with fork until crumbly, sprinkle on top batter before baking 1/2 cup sugar 1 Tbsp flour 1 Tbsp melted butter 1/2 tsp nutmeg 1/4 tsp cinnamon
Flan Cake
1 bottle caramel ice cream topping 1 box cake mix - mix according box directions and add 1 pkg jello vanilla pudding Separately mix 2 eggs 1 can condensed milk 1 can evaporated milk 1 tsp vanilla Preheat oven to 350 degrees Spray bunt cake pan to avoid sticking add some caramel ice cream topping in bottom of the bunt pan- as much as you like. Pour in cake mixture pour liquid mix as close to bunt cake pan cone so liquid goes below the cake mix and to the bottom of the bunt cake pan. Bake at 350 degrees for 1hr. Let cool on wire rack then flip the cake flan will be on top cake on the bottom ..
Carribean curry chicken
1 large yellow onion salt and pepper 4 pieces of garlic 1 sprig thyme 1 yellow 1 red bell pepper Jamaican curry powder and allspice powder chives or green onions chopped 1/2 Jamaican Scotchbonnet peppers (or jerk seasoning) if no pepper is available 1 package chicken thighs deboned and count up into pieces variation : add coconut milk and lemon grass Sauté onions, garlic, thyme, all spice, peppers salt and perpper to taste .Add chicken allow to sauté then add curry to taste ...Add coconut milk and lemon grass for a Thai flavor if you desired. Let cook until meat is tender . Serve with white rice
Kielbasa and Broccoli
1 Medium Onion chopped Extra virgin olive oil 1 Sprig of Thyme 1 Red sliced hot peppers for heat (Variation ) 1 Red and 1 yellow bell pepper 3-4 Garlic pieces 1 Pkg frozen Broccoli spears 1 Pkg Hillshire Farms Polska Kielbasa Sauté chopped onion in olive oil add garlic, thyme Add Polka Kielbasa or any soft sausage. Add red pepper and bell peppers Add frozen broccoli, add salt and pepper if needed. Cover let steam cook for 10-15 minutes Serve with white rice or eat as is for Keto friendly meal
