Mango Clafoutis

Easy to make and a not too sweet delicious fruity dessert made with a custard base. Very similar to pancake batter it has a smooth but firm flan like texture, with the fruits decoratively sitting along the top. After baking flip over dust with powdered sugar and enjoy !

Ingredients

  • 2 large ripe mangoes diced into cubes
  • 3 Large Eggs
  • 1/2 Cup (100gr)Sugar
  • 1 Pinch Salt
    1/2 Cup (60gr)Flour
  • 2 Tbsp (28.4gr)Butter unsalted melted and cooled till just warm
  • 1 Cup(8.6oz/240gr ) Whole Milk
  • 1 Tsp Real Vanilla extract
  • 2 Tsp Lemon/Orange zest Optional
  • Butter As needed for greasing the pan
  • Dust with Powdered sugar To serve

Instructions

  1. Preheat the oven to 375°/190 C.(non fan/170 fan) Butter a 9-inch circular pie dish or any other oven-safe shallow dish
  2. Slice and cube the mango (or other fruit), removing the seeds. Arrange the sliced mango or other fruit in the pan in a decorative pattern. Set aside.
  3. Break the eggs into a medium bowl. Whisk to break up the yolks. Add sugar and whisk until all the sugar is incorporated. Add the salt, vanilla extract, melted butter
    and the zest (if using). Mix well. Add flour and whisk (or use mixer) until smooth and lump free. Whisk (mixer) in the milk. Once the batter looks smooth pour over the prepared mango (fruit). Batter will look watery but don’t worry.
  4. Bake for 35-40 minutes until the Clafoutis is just set with golden edges on the sides. It might be still wobbly in the center, but not runny. If the edges and part of the tops are turning brown but you see liquid along the sides of the fruit, cover the top of the dish
    loosely with a piece of foil and let it bake for 5 to 10 more minutes. Remove from the oven
  5. and set on a cooling rack to cool.
  6. Wait until it is lukewarm. Dust with powdered sugar, cut into wedges and serve.

Notes

  • Increase sugar for your taste… ⅓ C sugar makes this dessert lightly sweet.
  • Use the best quality vanilla extract you have. If you have vanilla pods scrape and use 1 whole bean here.
  • Adding the flour before milk makes it easier to get a lump free mixture.
